Set in the grounds of a beautiful 18th Century cocoa estate, the luxurious Boucan by Hotel Chocolat is Saint Lucia’s newest boutique hotel and a must-visit for all lovers of chocolate. The 140-acre Rabot Estate, dating back to 1745, is the oldest on Saint Lucia, but the accommodation is stylish and contemporary, and the hotel’s Engaged Ethics Programme is helping to revitalise the island’s cocoa industry.

Location
Set high in the hills of Saint Lucia's interior, 45 minutes from Hewanorra Airport and 5 minutes from Soufrière.

Accommodation
The 6 Lodges are centred around a courtyard, with some offering a view of Petit Piton, while the 8 Luxe Lodges are elevated with dramatic views of both Pitons and the Caribbean Sea. The Luxe Lodges also have a lounge with a chaise longue and an open verandah. All rooms have an open sky rain shower, pre-loaded iPod and docking system, concierge cabinet with a range of drinks and freshly made chocolate treats, and polished granite bathrooms with REN toiletries.

Facilities
By day, relax by the hotel’s spectacular black quartz infinity pool or explore the plantation and learn how local people are benefitting from Hotel Chocolat’s ethical approach to growing cocoa. In the evening you can savour the unique cocoa-inspired cuisine at the excellent Boucan Restaurant. Cocoa is also on the menu at the hotel’s spa, and the signature Full Cacao massage is particularly recommended. A wide range of activities can be arranged, such as trips to nearby beaches, rainforest hikes or scuba diving.

The restoration of the Rabot Estate has already helped to create a hundred new jobs for local growers, and the hotel's Engaged Ethics Programme guarantees that all the cocoa produced will be bought for up to 40% more than the global market price.

What you need to know


• Owner Angus Thirlwell was inspired to buy a cocoa estate in the Caribbean after receiving a book from a customer about cocoa growing in the 1920s, and when he found the Rabot Estate it was love at first sight

• The menu at Boucan restaurant is simply mouthwatering, even if you don't have a sweet tooth, with cuisine exploring the use of cacao as both a sweet and a savoury ingredient

• If you don't know your cacao from your cocoa then we recommend the 'Tree to Bar' experience, where you can create your own delicious chocolate
