Argentinian born Gabriel Kolofon has recently been appointed as the Executive Chef at the beautiful property; Belmond Maroma Resort & Spa. His style uses fresh, seasonal and local produce to create exquisite creations for the guests of the hotel to enjoy.
Kolofon’s delectable dishes are available in all three of the hotel restaurants: Freddy’s Tequila and Ceviche Bar, which is a laid back beach lounge, serving fresh fish in a variety of forms, such as sushi and ceviche. El Sol Tapas & Restaurant is a fusion of Mediterranean and Mexican cuisine and finally El Restaurante, which is the most formal of the three, which is host to a range of regional specialities.
Kolofon started his career in Buenos Aires, working in a variety of restaurants and hotels, since then his work has taken him globally, working in Colorado and Chicago.
He has gained experience in a variety of international branded hotels. Now he is part of the team at Belmond Maroma Resort & Spa, which here at Caribtours, we think is one of the best hotels in the Rivera Maya.
